It’s a rich, satisfying account of one woman’s cross-country search for the age-old dessert. On the quest for velvety meringues, savory fillings, and flaky crusts, she and her tasters break bread with locals who dole out Forrest Gumpian tidbits — ”Pies reflect your personality” — and fork over recipes for huckleberry, shoofly, Belgian prune, and more. (Note to the author: Next time, steer the pie-mobile to Michigan for my grandma’s apple.) Even die-hard Mrs. Smith fans will be inspired to raise their rolling pins. And as one 12-year-old baker says, ”Take your time. You just can’t rush a pie.”
