Kuh has the kitchen experience, restaurant contacts, and passion for food and history necessary to make Haute Cuisine an informed read for the devoted foodie, who will doubtless be drawn to behind-the-scenes anecdotes about famous restaurants like the Four Seasons and Chez Panisse. What he doesn’t have, apparently, is a copy editor. Food, like art, is an area in which the writing has to be elegant and lively to bring the sensory — and sensual — subject to life. Unfortunately, awkward sentences and mistakes like ”Children where [sic] simply described as ‘rancid issue”’ occasionally turn this mostly fun feast into a laborious meal.
