Verdura: Vegetables Italian Style

Verdura has more fresh, fast Italian and Italian-style recipes from the Los Angeles-based coauthor (with Evan Kleiman) of last year’s Cucina Rustica. This time La Place features vegetables (verdura in Italian), which she grills, stuffs, purees, and uses in a range of dishes from spreads to savory meatless stews. By now her store of these sprightly dishes, or her facility for dreaming them up, seems inexhaustible. For artichokes alone she’s come up with 16 different ideas, none of them farfetched.
