The Cuban population that has revitalized Miami is also warming up American cuisine with food that is hearty yet festive. As former Miamian Linette Creen points out in A Taste of Cuba, Cuban-Americans usually supplement the basic diet of black beans, rice, roots, and plantains with the sorts of meat and seafood dishes represented in her recipes. Creen has sampled Cuban food as a frequent guest at public and private Miami holiday celebrations, an exposure that may explain the party snacks, sweets, and rum drinks she includes among the more substantial family dishes.
